Recipe: Healthy Cookie Dough Dip

  • A handful of vegan dark chocolate chips

  • 1 15-oz. can of chickpeas, drained and rinsed

  • 3 tbsp nut or seed butter (peanut, cashew, almond, or sunflower)

  • 2-4 tbsp maple syrup or date syrup, to taste (you can substitute 4 soaked and pitted medjool dates)

  • 1 tsp vanilla extract, optional

  • ¼ cup rolled oats

  • ¼ cup water or non-dairy milk

  • ⅛ tsp baking soda

  1. Combine all ingredients except the chocolate chips in a blender or food processor.

  2. Pulse to a cohesive, dough-like consistency. Pause and scrape sides, stir, or add splashes of water or non-dairy milk as needed.

  3. Stir in chocolate chips.

  4. Scoop into a bowl or storage container and refrigerate to cool.

  5. Enjoy on its own or as a dip, such as with carrots or apple slices.
